Schnitzel Franconian(Yields 5 To 6 Servings) - cooking recipe
Ingredients

6 breaded veal patties
6 Tbsp. vegetable oil
1 can artichoke hearts (do not drain)
2 to 3 fresh tomatoes
2 medium onions
8 c. cooked rice, prepared according to pkg. instructions
Preparation
-
Brown veal patties in hot oil in skillet.
Add remaining ingredients and cover.
Simmer only long enough for vegetables to be hot.
Do not overcook.
Tomatoes and onions should be on the crunchy side.
Serve over hot rice.
