Fresh Apple Cake - cooking recipe

1 1/2 c. salad oil
2 c. sugar
2 large eggs
1 tsp. salt
1 tsp. soda
2 tsp. baking powder
2 tsp. vanilla
2 1/2 c. all-purpose flour
1 c. chopped pecans
3 c. chopped apples
Preparation

Prepare apples and set aside.
Measure salad oil into large bowl.
Add sugar and eggs and beat on low speed of mixer until creamy.
Sift flour and measure.
Sift again with salt, soda and baking powder.
Add flour mixture a little at a time and beat well.
Fold in apples, pecans and vanilla.
Batter will be stiff. Spread evenly in a greased and floured 9 x 12-inch pan and bake at 350\u00b0 for 50 to 60 minutes.
Can be served plain or with whipped topping.
