Hot And Chili Beans - cooking recipe
Ingredients

1 Tbsp. olive oil
1 large onion, chopped
4 cloves garlic, minced
4 large tomatoes, chopped
2 jalapeno peppers (or 1 bell pepper for mild chili), chopped
1 Tbsp. chili powder
1 tsp. cumin
1 (15 oz.) can red kidney beans, rinsed and drained
1 (15 oz.) can white kidney beans, rinsed and drained
1 tsp. cilantro, dried (optional)
Preparation

In a large saucepan, heat oil over medium heat.
Add onion. Saute for 3 to 4 minutes.
Add garlic.
Saute for 2 more minutes. Stir in tomatoes, peppers, chili powder, cumin, beans and cilantro. Cover and reduce heat to simmer.
Cook gently for 15 minutes, stirring occasionally. Serve with cornbread or over cooked elbow macaroni.
Yields 4 servings.
