Carrot & Raisin Salad - cooking recipe

Ingredients
    6 Tbsp. raisins
    2 C. grated carrots (4 medium/large carrots)
    1 C. drained, crushed pineapple (in its own juice)
    1/3 C. lite mayonnaise
    1 Tbsp. lemon juice
    1/4 tsp. salt
    2 pkg. sugar substitute
Preparation
    Toss raisins, carrots and pineapple together. Set aside. Stir together mayonnaise, lemon juice, salt and sweetener. Add to carrot mixture. Refrigerate. Approximately 6 1/2 cup servings.
