1 1/4 c. firmly packed light brown sugar
3/4 c. creamy peanut butter
1/2 c. shortening
3 Tbsp. milk
1 Tbsp. vanilla extract
1 egg
1 3/4 c. all-purpose flour
3/4 tsp. baking soda
3/4 tsp. salt
Preparation

Heat oven to 375\u00b0.
Combine brown sugar, peanut butter, shortening, milk and vanilla in large bowl.
Beat at medium speed of electric mixer until well blended.
Beat in egg just until blended.
Combine flour, baking soda and salt.
Add gradually to creamed mixture at low speed.
Mix just until blended.
Drop by heaping teaspoonful 2 inches apart onto ungreased baking sheet. Bake at 375\u00b0 for 7 to 8 minutes or until just beginning to brown and set.
Cool 2 minutes on baking sheet before removing to foil. Yields 3 dozen cookies.
