Curried Zucchini Soup(Serves 5 To 6) - cooking recipe

Ingredients
    3 Tbsp. butter
    1 lb. zucchini, washed and sliced in 1/4-inch rounds
    1 large garlic clove, minced
    salt and pepper to taste
    1 1/4 c. chicken stock or broth
    1/2 c. cream or milk
    1/2 to 1 Tbsp. curry powder
    chopped parsley (for garnish)
Preparation
    Melt butter in frypan; add zucchini, garlic and scallions; cook, covered, over low heat until zucchini has softened but is not limp.
    Transfer mixture to blender.
    Add broth and cream and blend.
    Add salt, pepper and curry powder to taste.
    Serve hot or cold.
    Nice first course.
