Twice Fried Potatoes - cooking recipe
Ingredients

1 potato per person
olive oil
1 clove garlic per potato
salt
Preparation

Slice the potatoes thinly.
Add olive oil (1/8 cup) to a heated nonstick frying pan.
Add crushed garlic to pan along with the potatoes.
Make sure the oil in the pan is adequate to coat the potatoes.
Fry the potatoes until lightly browned on both sides.
After lightly browned, remove the potatoes from the pan and let them cool completely.
After cool, reheat pan; add additional oil (1/8 cup) and cook the potatoes again on both sides until nicely browned and tender.
Salt to taste and serve.
