Stuffed Mushrooms - cooking recipe
Ingredients

12 large mushrooms
2 Tbsp. olive oil (may use butter)
1 small onion, chopped
1/2 clove garlic
4 anchovy fillets, chopped (optional; may substitute 1 tsp. anchovy paste)
1 Tbsp. chopped parsley
1/4 tsp. salt
1/2 tsp. pepper
1 slice bread, soaked in water and squeezed dry
1 egg
2 Tbsp. flavored bread crumbs
Preparation

Cut off stems from mushrooms and wash well.
Chop the stems and cook in olive oil with onion and garlic for 5 minutes.
Add anchovies, parsley, salt and
pepper and cook 5 minutes longer over high heat.
Remove from stove; add bread slice and egg and mix together until smooth.
Fill each mushroom cap with stuffing, rounding stuffing up on top.
Sprinkle with bread crumbs, then with oil and place in greased baking pan in hot oven (400\u00b0) for 20 minutes.
Serves 4.
