Baked Butternut Squash - cooking recipe

Ingredients
    2 large shallots, minced
    1 small butternut squash (about 1 1/4 lb.), peeled and seeded
    1 Tbsp. sweet butter
    1/2 tsp. salt
    1/8 tsp. nutmeg
    pepper
    1/4 c. fresh parsley leaves, minced
Preparation
    Butter a 1-quart baking dish; set aside.
    Position rack in center of oven and preheat to 350\u00b0.
    Using food processor, slice squash thinly.
    Melt butter in large skillet over medium heat. Add shallots and saute until softened, about 5 minutes.
    Stir in squash; add salt, nutmeg and pepper to taste and cook 3 more minutes.
    Transfer to prepared dish.
    (Can be prepared ahead to this point; cover and chill.)
    Bake covered for 45 minutes.
    Add parsley and toss lightly.
    Adjust seasoning.
    Serves 4.
