Fresh Apple Cake - cooking recipe

Ingredients
    4 c. Winesap apples, diced
    3 c. sifted all-purpose flour
    3/4 c. vegetable oil
    2 eggs, well beaten with fork
    1 c. pecans
    1/2 tsp. cinnamon
    1/2 tsp. salt
    2 c. sugar
    2 tsp. baking soda
    1 tsp. vanilla
Preparation
    Put apples, nuts and sugar together.
    Let stand 1 1/2 hours, stirring several times.
    Combine dry ingredients, then add apple mixture.
    Add oil, vanilla and eggs.
    Do not use mixer.
    Stir until well mixed.
    Pour into well-greased and floured pans (either 2 loaf pans or a small Bundt pan and a loaf pan).
    Bake at 350\u00b0 for about 1 hour and 15 minutes (or until toothpick comes out clean).
