Zucchini Casserole - cooking recipe

Ingredients
    about 2 lb. zucchini
    1 onion, chopped
    2 eggs
    1/4 c. sour cream
    1 c. grated yellow cheese
    cracker crumbs
    salt
    pepper
Preparation
    Wash, peel and slice zucchini.
    Cook in small amount of water until tender.
    Drain and blend in blender or use potato masher. Add onion, eggs, sour cream and 1/2 cup cheese.
    Add salt and pepper and blend or mix with hand egg beater.
    Pour mixture into shallow baking dish.
    Top with 1/2 cup cheese and cracker crumbs. Bake at 350\u00b0 for 30 minutes.
    Serves 8 to 10 people.
