Jeff'S Pot Roast - cooking recipe

Ingredients
    2 to 3 lb. chuck roast
    1 c. flour
    1/2 tsp. pepper
    1/4 tsp. salt
    1/2 tsp. thyme
    1/2 tsp. marjoram
    4 large potatoes, cut in cubes
    8 medium carrots, sliced lengthwise
    2 large stalks celery, cut up
    12 small onions, whole or cut in slices
Preparation
    Mix flour with herbs and spices; rub into meat, coating completely.
    Heat 2 tablespoons shortening in a large, deep skillet or Dutch oven.
    Brown meat on each side for 8 minutes. Reduce heat; pour in 1 to 2 cups hot water.
    Cover; simmer roast for 1 hour before adding vegetables and a dash of salt.
    Cover; simmer/cook vegetables and roast together until they are tender (about 45 minutes to 1 hour).
    If desired, take roast from pan along with vegetables.
    Make gravy from liquid in pan.
