Spinach Balls - cooking recipe
Ingredients

2 (10 oz.) pkg. frozen chopped spinach, cooked according to pkg. directions and drained well
2 c. one step chicken flavored stuffing mix
1 c. grated Parmesan cheese
6 large eggs, lightly beaten
1 1/2 sticks butter or margarine (3/4 c.)
1/2 tsp. salt
pepper to taste
Preparation

Mix all ingredients in a large bowl until well blended.
Roll level tablespoonfuls of the mixture into balls the size of walnuts (makes about 60) and arrange them on a jelly roll pan close but not touching.
Freeze until hard, then pack in a gallon size freezer food storage bag.
