Zucchini With Stuffing - cooking recipe

Ingredients
    4 c. zucchini slices
    3/4 c. shredded carrot
    1/2 c. chopped onion
    1/4 lb. Velveeta cheese, cubed
    2 3/4 c. plain croutons
    1 can cream of mushroom or celery soup
    1/4 tsp. basil
    1/8 tsp. pepper
    1/4 c. margarine
Preparation
    Saute vegetables in 3 tablespoons margarine.
    Combine remaining ingredients, reserving 3/4 cup croutons.
    Spoon into 1 1/2-quart casserole.
    Top with reserved croutons tossed with remaining melted margarine.
    Cover; bake at 350\u00b0 for 30 minutes.
    Remove cover and continue baking 10 minutes.
