Jambalaya - cooking recipe
Ingredients

1 (3 lb.) fryer
salt and black and red pepper to taste
flour (enough to coat chicken)
3 Tbsp. fat
3 large chopped onions
5 ribs celery, chopped
2 cloves garlic, chopped
1/4 bell pepper, chopped
2 c. rice
1 can beer
2 tsp. salt
Preparation

Cut chicken into serving pieces.
Season with salt and pepper. Coat well with flour; fry chicken until brown in hot oil.
Then remove from skillet.
Add vegetables and cook until wilted.
Put chicken back in skillet and cover.
Cook slowly until tender (about 30 minutes).
Add rice to chicken.
Stir thoroughly for 2 to 3 minutes.
Pour beer over mixture and stir.
Add salt and cook slowly (about 30 minutes) until rice is cooked.
