Special Peaches - cooking recipe

Ingredients
    9 lb. medium sized, firm peaches
    3 lb. sugar
    1 1/2 c. apple-cider vinegar
    5 sticks cinnamon, broken
    4 whole cloves per peach
    1 tsp. ground allspice
    1 tsp. grated, fresh ginger
Preparation
    Preheat oven to 300\u00b0.
    Dip peaches in scalding hot water for a few seconds.
    Slip off skins while hot.
    Stick 4 cloves in each peeled peach and place in roaster.
    Mix sugar, vinegar, cinnamon sticks and allspice in a bowl.
    Mix well and pour over peaches. Cover with liquid.
