Cheese Soup - cooking recipe

Ingredients
    1/4 c. finely chopped onion
    1/4 c. finely chopped carrots
    1/4 c. finely chopped celery
    2 Tbsp. butter
    1/3 c. flour
    2 c. chicken broth
    2 c. milk or half and half
    1 lb. shredded Cheddar cheese
Preparation
    In a large saucepan, cook veggies in butter until tender but not brown.
    Stir flour into broth until smooth.
    Add broth and cream to vegetables.
    Cook and stir until thickened.
    Add cheese. Season with salt and pepper.
    Cook just until cheese is melted. Serves 4.
