Luscious Layers - cooking recipe

Ingredients
    1 c. onion, sliced
    1 c. green pepper, chopped
    1 c. mushrooms, sliced
    1/2 lb. potatoes, sliced
    1 c. carrot, thinly sliced
    1/3 c. brown rice, raw
    1 c. zucchini, sliced
    3 1/2 c. stewed tomatoes, mashed
Preparation
    Saute onion, green pepper and mushrooms.
    Place sliced potatoes in bottom of a 2 1/2-quart nonstick baking dish. Alternate layers of carrot, rice, onion mixture and zucchini. Stir seasonings into mashed tomatoes and pour over vegetables.
    Cover and bake at 350\u00b0 for 2 hours.
    Serves 8.
