Cream Of Spinach Soup - cooking recipe

Ingredients
    1 lb. fresh spinach
    8 Tbsp. margarine
    1/2 c. onion, chopped
    1/4 c. celery, chopped
    3 c. milk
    1 c. heavy cream
    2 Tbsp. Parmesan cheese
    6 Tbsp. flour and pepper to taste
Preparation
    Chop fresh spinach and steam in 2-inch water until tender; set aside.
    Saute onion and celery in melted margarine.
    Stir in flour. Add spinach (do not drain).
    Simmer 15 minutes with onion and celery.
    Add milk, cheese and seasonings; allow to heat.
    Slowly stir in cream.
    If thicker soup is desired, add 2 tablespoons cornstarch, dissolved in 4 tablespoons cold water.
    Serves approximately 8.
