Curried Rice Pilaf(Yields 6 Servings) - cooking recipe
Ingredients

1 c. cut corn
1 c. peas
1/4 c. chopped bell pepper
1/4 c. chopped onion
1/2 c. chopped celery
3 c. rice
6 c. water
2 tsp. hot curry powder
2 tsp. red pepper
3 tsp. salt (optional)
2 tsp. cooking oil
Preparation

In large pot, bring rice to a boil.
In a separate skillet, add oil, onion, corn, peas, bell pepper, celery and curry. Stir-fry until soft, but not browned.
As rice comes to a boil, add ingredients from skillet and red pepper.
Stir.
Simmer 15 to 20 minutes.
