Summer Tomato Salad - cooking recipe

Ingredients
    2 medium ripe tomatoes
    8 oz. Mozzarella or goat cheese, sliced thin
    6 large fresh basil leaves, finely chopped
    1/2 tsp. pepper, divided
    Tarragon Vinaigrette (see Misc.)
    1 medium cucumber, sliced
    1 onion, sliced
    basil leaves (optional)
Preparation
    Layer tomato and cheese slices in a shallow dish.
    Sprinkle with 1/2 basil and 1/4 teaspoon pepper.
    Drizzle with 1/4 cup Tarragon Vinaigrette.
    Top with cucumber and onion slices. Sprinkle with remaining basil, pepper and dressing.
    Cover and chill for 4 hours.
    Makes 4 to 6 servings.
