Greta'S Fried Chicken - cooking recipe

Ingredients
    1 chicken
    salt to taste
    1 c. self-rising flour
    1 c. self-rising meal
    vegetable oil
Preparation
    Skin chicken, then add salt.
    Mix flour and meal; sift together.
    Roll chicken in mixture.
    Fill frying pan 1/3 full of vegetable oil.
    Heat oil until hot.
    Put chicken in oil.
    Cover and brown.
    Turn chicken until all sides are brown.
    Turn heat down to a slow simmer for about 25 minutes.
    Keep turning chicken; this lets chicken get tender.
