Pinto Bean Pie - cooking recipe
Ingredients

1 1/2 c. sugar
1 1/2 c. cooked, mashed pinto beans
1 tsp. allspice
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. nutmeg
3 egg yolks, beaten
Preparation

Combine
sugar and spices in a medium mixing bowl.
Mix well; add
beans,
egg
yolks and vanilla.
Mix until smooth. Pour
into a\tpastry\tshell.\tBake
at
350\u00b0\tfor 15 minutes. Reduce\theat to\t300\u00b0; bake for 45 minutes.
Make meringue of egg
whites and 6 tablespoons of sugar;
spread on top of pie. Brown for 10 to 15 minutes.
