Black-Eyed Peas Rice - cooking recipe
Ingredients

1/2 lb. salt pork, sliced
1 lb. dry black-eyed peas
2 qt. water
1 1/2 c. long grain rice
Preparation

Fry salt pork in Dutch oven to render fat.
Remove pork from fat with spoon.
Add water and black-eyed peas.
Cover and cook over low heat.
After 1 hour of cooking, test peas for taste and add salt if needed.
When peas are tender, add rice.
Cover and simmer until water is absorbed.
