Cream Of Broccoli And Cheese Soup(Low-Fat) - cooking recipe

Ingredients
    2 c. celery, diced
    1 c. onion, diced
    1 (10 oz.) pkg. frozen chopped broccoli
    1 c. uncreamed cottage cheese (dry curd)
    2 c. skim milk
    1 can chicken broth, chilled and fat removed
    1 1/2 tsp. salt
    2 Tbsp. cornstarch
    1 tsp. paprika
    pepper to taste
Preparation
    In 2 1/2-quart saucepan, saute onion and celery in 3 tablespoons of the chicken broth.
    Add broccoli and cover; cook about 5 minutes.
    Blend cottage cheese and milk in blender until smooth.
    Mix cornstarch with remaining chicken broth and add to broccoli mixture.
    Bring to a boil, stirring constantly.
    Lower heat and stir in cheese mixture.
    Heat through, but do not boil. Makes 6 servings at 1.18 g of fat per serving.
