Chicken Jambalaya - cooking recipe
Ingredients

5 lb. chicken, quartered
2 Tbsp. oil
2 Tbsp. bacon fat
salt
pepper (freshly ground)
1/8 tsp. cayenne pepper
1 c. diced ham
1/2 c. green pepper, chopped
1/2 c. celery, chopped
1 large onion, chopped
2 cloves garlic, minced
5 c. chicken broth
1/4 c. parsley, minced
1 bay leaf
1 1/2 tsp. thyme, crushed
1 c. tomatoes (canned or fresh)
2 c. rice
Preparation

Preheat the oven to 325\u00b0.
Rinse the chicken pieces and wipe dry.
Heat oil and bacon fat in large skillet.
Brown the chicken pieces and sprinkle with salt, pepper and cayenne pepper. Remove from the pan and set aside.
