Orange-Cumin Beef Tenderloin - cooking recipe

Ingredients
    2 Tbsp. cumin seed
    grated zest of 2 oranges
    3 cloves garlic, minced
    1 Tbsp. dried thyme
    1 Tbsp. cracked black pepper
    1 Tbsp. chili powder
    1 Tbsp. brown sugar
    1 Tbsp. salt
    4 to 6 lb. whole beef tenderloin
    2 Tbsp. oil
Preparation
    Preheat oven to 450\u00b0.
    Combine zest, cumin seed, garlic, thyme, pepper, chili powder, brown sugar and salt.
    Brush meat with oil.
    Rub spice mixture over meat.
    Place in roasting pan. Roast until meat is done, about 45 minutes for medium-rare.
    Let stand 15 minutes before slicing.
    Makes 12 servings.
