Garden Frittata Omelette - cooking recipe

Ingredients
    2 potatoes, peeled and cubed
    2 Tbsp. butter or margarine
    1 large onion, thinly sliced
    1 large red pepper, thinly sliced
    1 zucchini, diced in 3/4-inch pieces
    1 (5 oz.) pkg. garlic and herb semi-soft cheese, crumbled
    8 large eggs
    1/2 tsp. black pepper
    1/4 tsp. salt
Preparation
    In boiling water, in saucepan, cook potatoes for 5 minutes, until just done.
    Drain.
    In large nonstick skillet, melt butter over medium heat.
    Saute onion for 5 minutes, until soft.
    Add all vegetables.
    Saute for 6 minutes, until crisp-tender.
    Add cheese.
