Holiday Sweet Potatoes - cooking recipe

Ingredients
    3 large sweet potatoes (about 3 1/2 lb.)
    1 (20 oz.) can pineapple chunks in their own juice
    1 small orange, sliced
    1/2 medium-size lemon, sliced
    1 c. packed dark brown sugar
    1/2 c. dark seedless raisins
    4 Tbsp. butter (1/2 stick)
    1/2 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1/2 tsp. ground allspice
    1 (11 oz.) can mandarin orange sections, drained
    2 medium-size firm bananas, sliced
    1/2 c. pecans, toasted and chopped
    1/2 c. miniature marshmallows
Preparation
    In 5-quart saucepot over high heat, heat sweet potatoes and enough water to cover to boiling.
    Reduce heat to low; cover and simmer 30 to 40 minutes, until potatoes are fork tender.
    Drain potatoes; cool slightly until easy to handle, then peel and cut potatoes into 1/2-inch thick slices.
