Raisin Zucchini Bread - cooking recipe

Ingredients
    2 c. shredded zucchini
    2 c. sugar
    1 c. oil
    3 eggs, beaten
    1 tsp. vanilla
    3 c. flour
    1 Tbsp. cinnamon
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. baking powder
    1 c. seedless raisins
    1 c. chopped walnuts
Preparation
    Finely shred zucchini; set aside.
    Cream the sugar and oil; add eggs, zucchini and vanilla.
    Mix well.
    Combine flour, cinnamon, salt, baking soda and baking powder; mix well.
    Add raisins and walnuts into dry ingredients.
    Combine with zucchini mixture; mix well.
    Pour into two 9 x 5-inch, greased and floured pans.
    Bake at 350\u00b0 for 1 hour.
    Let stand 10 minutes, then turn out on wire rack to cool.
