Bacon And Tomato Potato Skins - cooking recipe

Ingredients
    6 large baking potatoes
    2 tsp. cooking oil
    1 tsp. chili powder
    2/3 c. chopped Canadian style bacon
    1 medium tomato, finely chopped
    2 Tbsp. finely chopped onion
    1 c. cheese
    1/2 c. sour cream (optional)
Preparation
    Clean and poke potatoes with a fork; cook on High in microwave 17 to 22 minutes or until almost tender.
    Rearrange once.
    Halve each potato lengthwise.
    Scoop out the inside of each half, leaving about 1/4-inch thick shell.
    Cover and chill the leftovers.
    Combine the oil, chili powder and pepper.
    Brush the inside with oil mixture.
    Cut the potato halves lengthwise; sprinkle with bacon, tomato and onion.
    Top with cheese.
    Bake in a 450\u00b0 oven for 10 to 12 minutes until cheese melts.
    Serve with sour cream.
