Diabetic Apple Jelly - cooking recipe

Ingredients
    2 tsp. unflavored gelatin
    2 c. unsweetened apple juice
    2 Tbsp. liquid sweetener
    1 1/2 Tbsp. lemon juice
    yellow food coloring (if desired)
Preparation
    Soften gelatin in 1/2 cup of the apple juice.
    Bring remaining 1 1/2 cups of juice to a boil.
    Remove from heat.
    Add softened gelatin, stirring to dissolve.
    Add liquid sweetener, lemon juice and food coloring as desired.
    Bring to a rolling boil.
    Ladle into clean half-pint jars; seal.
    Keep in refrigerator.
    Makes 2 half-pint jars.
