Mexican Chicken Casserole - cooking recipe

Ingredients
    3 to 4 chicken breasts
    1 chopped bell pepper
    1/2 chopped onion
    1 small pkg. Doritos or Fritos (or 2 large handfuls), crushed
    1 can Ro-Tel, diced (do not drain)
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1 lb. Velveeta cheese, shredded
Preparation
    Preheat oven to 375\u00b0.
    Boil chicken until tender.
    Break chicken into small pieces and place in buttered 13 x 9 x 2-inch casserole dish.
    Add chopped bell pepper, onions, Doritos or Fritos, Ro-Tel tomatoes and cream of mushroom and chicken soups. Pour over mixture.\tTop with shredded cheese and cook 30 to 40 minutes.
    Serve over rice.
