1 lb. boneless lamb loin
2 Tbsp. hoisin sauce
2 Tbsp. soy sauce
1 Tbsp. cornstarch
1 1/2 Tbsp. dry sherry
1 Tbsp. sugar
4 Tbsp. cooking oil
2 slices fresh, peeled ginger root
1 clove garlic, minced
4 Tbsp. water or chicken broth
1 c. drained, sliced bamboo shoots
6 scallions, cut into 2-inch sections
1 tsp. dark sesame oil
Preparation

Cut meat against the grain into 2 inches long and 1/8-inch thick slices.
Combine hoisin sauce, soy sauce, cornstarch, sherry and sugar in a separate mixing bowl and set aside.
