Chicken And Barley Soup - cooking recipe

Ingredients
    1 pkg. chicken thighs, skinned and trimmed of fat
    5 1/2 c. chicken broth
    1/2 c. pearl barley
    1 stalk celery, chopped
    3 small carrots, chopped
    1 large tomato, peeled and chopped
    2 cloves garlic, minced
    1 Tbsp. soy sauce
    1/2 tsp. leaf basil
    dash of oregano
    dash of thyme
    dash of cayenne pepper
Preparation
    Place all ingredients in large pot.
    Bring to boil.
    Reduce to simmer, cover and cook about 1 1/4 hours, stirring occasionally. Remove thighs, cool slightly, remove meat from bone and return to soup.
    Discard bones.
    Simmer 15 minutes.
    Add 2 tablespoons parsley and salt and pepper to taste.
    Serve.
