Fried Rice - cooking recipe

Ingredients
    3 to 4 c. steamed rice
    1 lb. ground beef
    2 carrots, diced
    3 Tbsp. soy sauce
    1 medium onion
    1/2 c. frozen peas, thawed
    1 Tbsp. vegetable oil
    2 eggs
    salt and pepper to taste
    scallions, sliced (to garnish)
Preparation
    In a wok or deep skillet on medium heat, fry ground beef until light brown.
    Add onion and carrots. Cook about 5 minutes.
    Add cooked rice, green peas, soy sauce, salt and pepper.
    Mix thoroughly.
    Cook another 5 minutes.
    Transfer into serving dish. Beat eggs and fry in medium-hot pan, moving side to side to make a thin layer.
    Remove from pan; dice and sprinkle on top of rice. Garnish with chopped scallions.
