Wash Day Casserole - cooking recipe
Ingredients

1/4 c. butter
5 eggs
1/4 c. all-purpose flour
1/2 tsp. baking powder
1/2 lb. grated cheese (Cheddar, Jack or Hoop)
1 (16 oz.) can corn (cream or kernel)
1 c. cottage cheese
1/2 c. chopped green pepper
dash of salt
Preparation

Preheat oven to 400\u00b0.
In a 9-inch cast-iron skillet, slowly melt butter, turning pan to coat sides and bottom.
Mix eggs with fork until light and creamy.
Add remaining ingredients and mix just until blended. Pour into prepared skillet or casserole, if preferred.
Bake for 10 minutes.
Reduce heat to 350\u00b0 and bake 35 minutes longer (or until set).
Can be served hot or cold.
Makes 6 servings.
