Rice Salad - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 Tbsp. cider vinegar
    1/2 tsp. salt
    1/2 tsp. pepper
    3 c. cooked rice
    2 medium tomatoes, chopped
    1 medium cucumber, seeded and chopped
    1 small red onion, chopped
Preparation
    In a small bowl, whisk together oil, vinegar, salt and pepper. Add rice, tomatoes, cucumber and onion; toss.
    Serve chilled.
