Sweet Potato Casserole(Makes 12 Servings) - cooking recipe
Ingredients

3 lb. sweet potatoes or yams
2 eggs, well beaten
2 c. light cream or half and half
1/2 c. sugar
1 1/2 tsp. salt
1/4 c. melted butter
2 Tbsp. grated orange rind
1 tsp. grated lemon rind
1 tsp. nutmeg, ground
1/4 tsp. ground cloves
2 Tbsp. brown sugar
Preparation

Heat oven to 400\u00b0.
Cook unpeeled whole potatoes in boiling water until tender.
Slip off skins and mash potatoes until smooth. Add eggs, cream, butter, orange and lemon rind, salt, nutmeg and cloves.
Beat until light and fluffy.
Turn into 1 1/2-quart baking dish.
Sprinkle with brown sugar.
Bake 30 minutes at 325\u00b0.
