Gazpacho Shrimp - cooking recipe

Ingredients
    2 (16 oz.) jars Chi-Chi brand salsa
    1/2 c. diced yellow bell pepper (1/2-inch)
    1/2 c. diced cucumber (1/4-inch)
    2 Tbsp. lime juice
    2 Tbsp. sliced green onions
    1 lb. fresh or frozen medium raw shrimp, peeled and deveined
    2 Tbsp. chopped fresh cilantro
    hot cooked rice or pasta
    garlic tortilla chips
    avocado slices, if desired
Preparation
    In a large skillet, combine salsa, yellow pepper, cucumber, lime juice and green onion.
    Bring to a boil, simmer over medium heat.
    Stir in shrimp.
    Cook and stir 3 to 5 minutes or just until shrimp turns pink.
    Stir in cilantro.
    Serve over hot cooked rice or pasta with garlic tortilla chips.
    Garnish with avocado, if desired.
