Stuffed Zucchini - cooking recipe

Ingredients
    3 medium zucchini
    2 Tbsp. butter
    1 c. chopped mushrooms
    2 Tbsp. flour
    1/4 tsp. oregano
    1 c. shredded Monterey Jack
    2 Tbsp. chopped pimento
    1/4 c. grated Parmesan
Preparation
    Cook whole zucchini in boiling water for almost 10 minutes, or until tender; drain.
    Cut in half lengthwise.
    Scoop out centers, leaving a 1/4-inch shell.
    Chop center portion; set aside.
    Saute mushrooms and reserve zucchini.
    Preheat broiler.
    Fill shells, using approximately 1/4 cup filling; sprinkle with cheese.
    Broil for 3 to 5 minutes.
