Sweet Potato Pie - cooking recipe
Ingredients

1 1/2 c. mashed sweet potatoes (not yams)
1 c. evaporated milk
3 Tbsp. butter
1 c. sugar
1/2 tsp. salt
3 eggs, separated
1/4 tsp. lemon flavoring
1 tsp. lemon juice
1/4 tsp. cinnamon
1 (9-inch) unbaked pie shell
Preparation

Cook potatoes in boiling, salted water until tender.
Drain and peel.
Mash potatoes and add butter, sugar, salt, cinnamon, egg yolks, milk, juice and lemon flavoring.
Blend well.
Beat egg whites until stiff and fold gently but thoroughly into potato mixture.
Pour filling into pie shell and bake 15 minutes at 400\u00b0 and then reduce heat to 375\u00b0 for 30 minutes.
When a knife inserted just off center comes out clean, the pie is done.
