Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    3 Tbsp. butter
    3 Tbsp. flour
    1 can tomatoes
    1 small green pepper, chopped
    1 small onion, chopped
    1 tsp. salt
    1 Tbsp. brown sugar
    1 c. corn bread crumbs
    1/2 c. grated cheese
Preparation
    Peel eggplant, slice and cook until tender, then mash.
    In a saucepan, melt butter.
    Blend in flour.
    Add tomatoes, pepper, onion, salt, brown sugar and bread crumbs.
    Mix well and add mashed eggplant.
    Place in a casserole and top with grated cheese. Bake at 375\u00b0 about 30 minutes.
