Creole Shrimp Jambalaya - cooking recipe
Ingredients

3 1/2 Tbsp. cooking oil
1 can tomato paste, paste fried out
1 can tomato sauce
1 large onion, diced and fried
1/2 c. green onions or shallots, chopped
1/2 c. celery, chopped
1 to 1 1/2 Tbsp. salt or to taste
3 garlic cloves, minced
2 Tbsp. parsley, chopped
1/2 c. bell pepper, chopped
1 tsp. oregano
3 bay leaves, crumbled
cayenne or hot pepper to taste
3 lb. shrimp, peeled and deveined
3 1/2 c. rice
6 1/2 c. water
Preparation

Pour tomato sauce into the fried tomato paste.
Add fried onion and the next 9 ingredients; simmer a few minutes.
Add 1 cup water and bring to a hard boil.
Add rest of water, bring to hard boil, add shrimp and bring to boil again.
Add rice, bring to hard boil and stir.
Do not stir again.
cover, turn heat very low and let steam about 25 minutes, until rice is done, not gummy.
Keep covered.
