Lemon Chicken Cutlets - cooking recipe

6 boneless chicken breast halves (1 1/2 lb.), skinned
1/4 tsp. salt
1/4 tsp. pepper
vegetable cooking spray
1 Tbsp. margarine
1/4 c. dry sherry
1/4 c. chopped onion
2 Tbsp. grated lemon rind
2 Tbsp. lemon juice
1 c. water
1 tsp. chicken flavored bouillon granules
1/4 c. water
2 Tbsp. all-purpose flour
1/4 c. grated Parmesan cheese
1/4 tsp. paprika
2 Tbsp. chopped fresh parsley
Preparation

Trim excess fat from chicken.
Place chicken between 2 sheets of waxed paper; flatten to 1/4-inch thickness, using a meat mallet or rolling pin.
Sprinkle with salt and pepper; set aside.
