Marinated Carrots - cooking recipe

Ingredients
    1 bunch carrots, scraped and sliced
    2 cloves garlic, minced
    1/2 tsp. salt
    1/4 c. olive oil
    2 Tbsp. wine vinegar
    1 tsp. oregano
    1/2 tsp. pepper
Preparation
    Cook carrots in boiling salted water until tender, about 15 minutes. Drain and pour into bowl.
    While carrots are cooking, blend remaining ingredients. Pour over warm carrots.
    Cover and marinate for 12 hours.
    Serve at room temperature.
    Serves 8.
    Goes with almost anything.
