Ground Beef And Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, peeled and cubed
    1 lb. ground beef
    1 c. chopped onion
    1 c. chopped celery
    1 c. chopped green pepper
    1 c. butter-toasted bread crumbs
    1 c. chopped fresh tomatoes (do not precook)
    salt and pepper to taste
Preparation
    Cook eggplant in salted water until tender.
    Saute onions, celery and peppers in a little margarine.
    Mix meat that has been cooked and drained, eggplant and sauteed vegetables together.
    Add salt and pepper.
    Put in a buttered casserole dish.
    Add diced tomatoes and bread crumbs, then sprinkle a few bread crumbs on top.
    Bake at 350\u00b0 until hot through (takes about 20 minutes or longer).
