Sweet Potato Muffins - cooking recipe

Ingredients

1 egg
3/4 c. self-rising flour
1 tsp. baking powder
1/4 tsp. allspice
1 tsp. nutmeg
1/2 tsp. vanilla
1 (7 oz.) sweet potato, cooked
3 Tbsp. sugar
1/2 c. skim milk

Preparation

Mix all ingredients well.
Spray muffin tin with nonstick spray well.
Pour about 1 1/2 tablespoons of batter in each section of tin.
Bake in 400\u00b0 oven 12 to 15 minutes or until done.
