Red Beans And Rice - cooking recipe

Ingredients
    2 c. dry red kidney beans
    1 onion, diced
    2 cloves garlic
    3/4 tsp. salt
    1 bay leaf
    pinch of cayenne
    1 c. cooked ham, diced
    steamed rice
Preparation
    Wash beans and soak overnight in cold water.
    Drain beans. Cover with cold water.
    Add onions, garlic, salt and bay leaf. Bring to a boil.
    Reduce heat and simmer about 3 hours or until beans are tender, adding more water, if necessary.
    Add ham last 30 minutes of cooking.
    Season with cayenne.
    Remove bay leaf and serve over hot rice.
