Roasted Corn Salad - cooking recipe

Ingredients
    2 pkg. frozen corn, thawed and drained
    4 scallions, sliced thin
    1/2 c. chopped fresh cilantro
    3 Tbsp. cider vinegar
    1 Tbsp. olive oil
    1/4 tsp. salt
    1 red bell pepper, seeded and chopped
    4 green onions, sliced (including tops)
    1 Tbsp. honey
    1 tsp. Dijon mustard
Preparation
    Preheat oven to 425\u00b0.
    Spray baking pan with nonstick spray. Spread corn on pan.
    Roast for 20 minutes, stirring every 5 to 7 minutes.
    Cool completely.
    Combine bell pepper, scallions, green onions, cilantro, vinegar, honey, oil, mustard and salt.
    Stir in the corn.
    Cover and chill.
